Homemade Ice Cream Sandwiches


Ice cream sandwiches are definitely a "kids" treat. They make you happy, reminiscence over times once enjoyed and are just fun. Hey, it's a mix of cookies and ice cream, who wouldn't like it? If you do, then "you are a sad, strange little man, and you have my pity" (Bonus ice cream sandwiches for naming the quote).

I first made these little gems for my Super Bowl Party this past year and they were a huge hit. It is amazing how something super simple can make a big smash with people. Plus with something like a Super Bowl Party where finger foods are a must, these really add to the atmosphere.

The recipe is simple: you need cookies and ice cream. After the break I'll have some helpful tips on making the ice cream sandwiches but it's hard to go wrong.

Process

While the concept of cookies and ice cream is easy, the variety you can have is endless. Chocolate chip cookies, sugar cookies, peanut butter cookies can be paired with mint chocolate chip ice cream, Neapolitan, or double-fudge brownies. Heck, there are a dozen different vanillas to pick from. Make the choice, it's hard to go wrong.

If you are making these for other people though, it might be better to stick with flavors that appeal to the masses. I prefer Dreyer's Grand as Dreyer's Slow Churned tends to melt quicker but you could even use Ben & Jerry'sFor this, I used chocolate chip cookies with vanilla bean and mint chocolate chip ice cream.Chances are, those will satisfy near anyone who comes near them.


First you need the cookies. Here is my chocolate chip cookie recipe. I would recommend using the ¼ cup size cookies as those create a nice and large sandwich cookie. Make sure you pair cookies with another cookie of similar size. 


Scoop the ice cream generously onto one of the cookies and form it about an inch thick. You will want to make sure the ice cream is super frozen as they tend to melt quickly and ice cream is never the same after if it melts too much. I would recommend doing the ice cream bit a few at a time and then putting everything in the freezer to harden up again.

Homemade Ice Cream Sandwiches

Ingredients

Lots of cookies (pick your favorite)
Ice cream (pick your favorite flavor or something friendly to most palates)

Directions


  1. Bake your cookie of choice. Here is a recipe for chocolate chip cookies if you need it.
  2. Make sure ice cream is very frozen and firm, scoop ice cream onto cookie, filling it out to the edge and about 1 inch thick.
  3. Take your time, do a few at a time and then place everything in the freezer to re-harden the ice cream. It melts fast and its easier to work with when it is not soup.
  4. After forming the ice cream sandwiches, let them harden up in the freezer for about an hour prior to eating so they so melt and fall apart.
